OVERALL AIM AND SUMMARY OF JOB
Partnering with our food preparation team, this person will lead the charge to ensure that all food meets strict health and safety guidelines, while training the team and developing new methods to preserve our legacy of efficiency and quality. To further Ensure that the business is grown through the efficient and effective supply of the right stock at the right price and that stock is ordered correctly and timeously so that products are continuously available to customers and clients and control shrinkage.
KRAs
Sales
- Receive daily orders for specified dishes, fast foods, salads, etc.
- Check appropriate stock and record accordingly.
- Ensure that quality standards are met throughout the processes of food preparation and presentation.
- Ensure all orders are weighed and packaged according to orders and clients requests.
- Ensure correct shelve talkers are displayed and specials appropriately identified and indicated
Equipment, Facilities and Housekeeping
- Check the operation of equipment to ensure maintenance on specified quality standards and production schedules.
- Inspect equipment regularly to ensure it is in good working order and safe to use.
- Ensure equipment is properly cleaned and sanitized to the highest hygienic standards.
- Ensure that all food hygiene and safety standards are met and keep up to date with industry standards.
- Ensure storage areas, fridges, stoves and work areas are kept clean, tidy and hygienic.
- Ensure all safety precautions are adhered to and applied in the operation and cleaning of machines, etc
Stock
- Ensure the Take Away is adequately stocked with quality products.
- Negotiate with representatives from supply companies to determine order details.
- Ensure stock ordering is done according to rate of sale.
- Make sure a proper range of products is always available to customers.
- Apply effective time management and stock control to improve and maintain productivity and cost-effectiveness.
Business Growth
- Maintain GP percentage as per set target.
- Prepare costing data when and as required.
- Submit claims for promotions timeously and accurately.
- Ensure adequate packaging expense control is in place in returns of usage.
- Submit daily GP reports to management and identify problem areas for immediate rectification.
- Acts within budgetary parameters on financial/cost matters.
- Continuously source new suppliers and products and judge correctly when new products can be brought in
Staff
- Motivate your team and set objectives and strategies.
- Develop constructive and cooperative working relationships with your team and and maintain them over time, encouraging mutual trust, respect and cooperation.
- Assist staff with queries and ensure that performance is efficient and productive
Asset Management
- Control and manage assets of Company and report any problems to the Service Department Manager immediately.
- Ensure proper recording, maintenance and control of all assets and report problems to the Service Department Manager.
- Ensure all assets, that is machinery, equipment, furniture, vehicles and tools are handled with due care.
General
- Perform any other duties as reasonably requested or assigned.
JOB AND PERSON SPECIFICATIONS
Qualifications and Experience
- Appropriate apprentice training for at least 3 years in a similar environment.
- A relevant qualification will be an advantage
- Experience in a similar trade environment of approximately 10 years.
- Supervisory experience of at least 3 years.
- Knowledge and skills to supervise a butchery
- Able to do a presentation of butchery products.
- Exposure to financial reporting documentation
